Pancake anyone?

OK! Today is one of those days when I forget that my body is a temple and the healthy diet goes out the window.(I won't go into the other 364 days of the year at this stage). Pancakes are a must in the Blethyn house. The 'Boss' and youngest sprog (other two have left home) cover their pancakes with fruit, ice cream, sugar, and that nasty stuff that calls itself cream but comes in a spray can and looks like I should shave with it, (what's that all about?). Me, I just stick to sugar and a squirt of lemon. Followed by more pancakes obviously. What I can not believe is that there are people on this planet that don't know how to make a pancake. "but don't you just add water and shake?" NOOOOO! Not unless you live in a squat or are a student you don't!
Here are the bits you need to know...

Basic pancake batter (Enough for 8 pancakes)
1 large egg or 1 egg and one yolk
½ pint/280ml milk
4oz/110g plain flour (4 heaped dessertspoons)
1 tbsp melted butter
  • By hand: sift the flour into a bowl and make a well in the middle. Break in the egg (and yolk, if using) and add a pinch of salt and a splash of the milk. Whisk the egg, gradually incorporating the flour, to make a smooth cream. Whisk in the rest of the milk and the melted butter.
  • With a blender: put all the ingredients in a blender jug with a pinch of salt. Whizz until smooth.
